Cupcake love!

So since I love to bake and create lovely Cupcakes and Muffins, I decided to share some of my fav recipes with you. For those from Zurich, that are a little lazy to bake them, I visited the shop Cupcake Affair in Zurich and had a chat with the employees. They were very lovely and friendly and would even let me try out two of their Cupcakes (the big cupcake called Marylin Monroe and the Chai Fleur de Sel mini-cupcake) – SOOOO GOOD! You should really check them out, their creations are just perfect! So here’s one of my fav recipe:

The apple vanilla cupcake – perfect for fall (for 16 pieces)

Dough:

120g soft butter

120g sugar

Marrow of one vanilla

3 eggs

275g flour

2 teaspoons baking powder

2dl milk

1 big apple (a sweet and intense one)

Some lemon juice for the apple

Topping:

50g butter

50g powdered sugar

2 spoons lemon juice

150g mascarpone

How to make them:

Beat the soft butter, sugar and vanilla in a foam with a mixer. Add the eggs first and then add the flour, baking powder and the milk. Wash the apple, deseed it, and cut it into small pieces. Add the some lemon juice, to avoid a brown color of the apple. Add the apple into the flour and fill the cupcake moulds. Bake them 25 minutes until they’re golden with 160 degrees in an air circulation oven.

For the topping: 

Mix the butter wth the powdered sugar and stir it until it’s creamy. Add the lemon juice and the mascarpone, mix it really good. Put the frosting in a pastry tube and have fun decorating it! 🙂
